I'm very much considering replacing my reliable daily V reg laguna DTI with a retro MPV, however I know next to nothing about them.
I've seen a few cool Toyota townaces and mitsubishi delicas but good ones seem to command a bit above budget. It would have to be around the same value of my laguna with a full MOT so around 5-600squids, captains chairs front and back are a MUST, comfy plush velour is a MUST, as is a diesel engine, not too fussed about auto/manual as long as its not going to be appalling on fuel, and the ability to run on WVO is a bonus as I do with the laguna (gotta love that burnt chip fat smell).
So whats my options? Anything I should know when looking for one?

Renault Espace Mk1 is pretty funky if you can find one, they did come with a 2.1TD so not too slow.
Other option is a Chrysler Voyager with the VM diesel.
And I might be mad, but how about a VW T4 in a Caravelle dress?

You would be my best friend if you could find a T4 within budget, but I very very much doubt it. I wouldn't touch a voyager, parts prices and mainly the fact I've driven a V6 one and hated it see to that. mk1 espace is an option but finding one thats not got serious electrical (or other) problems within budget won't happen. I wouldn't mind a nice lucida but they're holding their value well. I've seen a few "average" condition early delicas go cheap, but tbh I'm a bit scared of them, repairs wouldn't be cheap I imagine.

Here's a Nissan Serena within your budget, but still with 4 days left to run on the auction, or another with nearly two days left to run. They are glacially slow, 0-60 in slightly less than 28 seconds, and all of the rest on eBay for around your budget are spares or repair. This is the kind of quality of diesel MPV you're going to find within budget. It's basically a case of looking through your local free ads and finding whatever you can.

1989 Peugeot 205. You know, the one that was parked in a ditch on the campsite at RRG'17... the glass is always full. but the ratio of air to water may vary.
