I retired 20 years ago and wished I'd put my money into property ! Not what you want to hear but a better option than trying to predict what cars will be desirable in the future plus the hassle of 20 years keeping them stored / maintained to retain their value. Somebody I know bought new one of the last aircooled Porsche 911's as an investment. It was kept in a heated garage and never used - he lost £25,000 when it was sold many years later !

I'm thinking hairdresser exotics, not-the-most-obvs-hot hatches, super-utilitarian cars and eligible street-food vans. Not all at once - the ideas being having one or two at a time that are appreciating... Anyone got any experience with this sort of thing? Buy a couple of cars that you like, use them and look after them. If they increase in value great, if not just have some more fun with them. But buying as a supplementary pension fund I'd so avoid. P.s. Maybe have a look at a mint limited edition MX5, possibly a 10th Anniversary Edition or JDM RS/V Spec etc. They can't get much cheaper imo.

Consider how much you will need to live off. Say you would need about £20k a year income.
How many cars will it take to create £20k a year? A lot I would say unless you're playing with the high end stuff. Old Lamborghinis and Ferraris etc.
Buying land, dividing into plots for propriety to be built with planning permission then sitting upon can make you big money in the long term. I know of a bloke who did this, £200k outlay made him £2m fifteen years on.
Or the buying a barn and converting as already said will give you a good regular income.
Buying barns and converting into stables is also a good money maker.
Cars would give you the satisfaction of rising in value but only make you a few grand. You can't really love off a few grand for your entire retirement

Property or land is much better option tbh, buying land amd getting planning appoved can be more profitable than lifting a finger.

I recently had a similar conversation with a friend of mine, I reckon Focus ST170's would be good to stash away if you had dry storage. They are cheap as chips now, MK1 focus's are being scrapped left right and centre. Makes me think back to 15 years ago when people were giving away XR3i's and XR2's and now look at the prices!

Honda Civic type R's unmodified (Up to the EP). All the kids that have them now will want to relive their youth in years to come so mint ones will be valuable for sure, stock up on the bodykits and spoilers these kids love now as the companies will die out and will become hard to find in good nick, I'd probably say any Hondas that have the "right engines" S2000, Accord T Type R, Integras. As others say, land is the best thing for proper money. They are the obvious choice in my eyes.
I'd love to say pointy long bonnet 2 seater cars, 280z's, 300zx's, supra mk3's, 3000gt etc may be cars to watch though cars that aren't that popular in their time rarely become really valuable, especially since they are all overshadowed by previous or following models which were better or other cars for sale at the same time by the same manufacturer (3000gt overshadowed by the EVO's).
I don't know if it's just me but Vecra GSI's, the saloon model rather than the hatch boot, I remember they did a special white "Supertouring" model. That'll be the one to go for. ST220 mondeos maybe?

Thanks for everyone's replies - Hot Civics, S2000s and Focus' definitely an interesting thought...
It just occurred to me - I wonder what will happen to all these lovely ICE cars once Electric starts to really take over? You can bet that the Govt will tax the pollution-making petrol/derv cars hard once things get over a hump and electrics are no longer the outlier...
I foresee huge scrappage schemes. And tumbling prices. But maybe a good time to bulk buy 'interesting' cars?
