Doing lots of mile regulary i would go for space , comfort , practicality most of all . And inconspicuous as well .
Best bet is some sort of saloon or something .
Does fuel factor in ? If not you can probably get a much better petrol car for that money than diesel .
I'm guessing you could get a hispec mondeo for that . Cheap and comfortable .
It all sounds well and good having something cool but i can assure you it gets bloody tiresome after a while [ i went across at Calais all down the north and west into Spain, all around Spain , across the south of France , Switzerland and back , in a golf gti mk2 ]

Can anyone tell me how much space is in the back of a MK3 Golf estate, seats down? I've seen quite a cool looking one, so would be more sensible choice, but if I can't sleep in the back, being 6 foot, then I will skip it.

I took an mx5 when working around southern France for 2-3 months. It was great on the twisty roads but hot as anything in the summer when we had a choice between burning with the roof down, or boiling roof up! Obviously some have air con. Not the best cruiser but as a result we took more interesting roads. At one point we needed a new ecu to be posted out from the uk because in the whole time we were there we didn't see another mx5 and, in the words of the local mechanic "it's not a twingo". All added to the fun.
Also did similar in a mk3 Fiesta which was surprisingly chilled because we weren't going anywhere in a hurry, and in a mk4 golf estate which was a easy but not so much fun.
If I were doing it again I' think I'd go to one extreme, either the mx5 or a cheap wafter like xj, e39 or so on.
Slept in the golf on occasion but found it to be a bit of a nuisance with no curtains and the fact it was already full of stuff!

Really would not advise sleeping in the car in a lot of those countries. Many people specifically target car parks truck stops etc especially if your cars foreign.
And that means whether you are in it or not. Assaulted or a favourite of gassing you!
Campsites are everywhere and cheap so why risk it.
And I would be going on car condition and who has owned it, history etc rather than if it's been Barryed up!

Currently driving a 1972 BMW 1602 as my daily. Don't ask about previous cars - there have been way too many and I stopped counting at 160!
