Love a garage build. I’d still consider some insulation on the walls. Some batten between the sheets and then ply over the top giving you a great surface to hang stuff on & less prone to damage than plasterboard. Some fire retardant paint would give a degree of protection from hot works too and isn’t stupidly expensive either. Reclaimed hoarding sheets can be had in half inch thickness for not a lot of money too. As it’s a garage, you can save a lot on buying your insulation from seconds & co. They have an eBay shop as well as a website & get factory rejects from Celotex and other manufacturers that are perfectly good enough for a garage. Saved me fortune when I did mine.
Been thinking about your flooring issues. The screeds will certainly be able to take care of the levelling issues but some granite chippings in the deeper areas would provide extra strength and resist nuisance cracking. The two pack resin flooring systems give really good results but you do have to get the surface preparation right for the best finish. Industrial tile is another option and will solve the uneven floor issues.
Looks like it's going to be a nice space when it's finished. It must be so frustrating to be having to end up on the verge of falling out with someone, just to get what you paid for.
I had some double glazing from a guy who made a big deal over how he installed properly, "not like these big firms". He ended up getting curse word off with me because I wasnt happy with the shoddy job he was doing. I ended up telling him to leave the courses of bricks under the door adjacent window, and I would rebuild them neatly myself, rather than have a course of mortar nearly the thickness of a brick. You've brought back some rage.
Great going I remember looking at my slab as the base went down thinking curse word this is gunna be big. As soon as the roof went on and a car through the door frame the building shrunk 50%..... god knows how. 3 months later it had shrunk to the same size as my old garage. Strange!
Dead right, mine is 12m x 8m, so pretty decent size. It’s rammed!!! I have literally NO room left. It currently houses 6 cars, 4 motorcycles, large tool chests, 2 post ramp, blast cabinet, compressor, welder, pushbikes etc etc. I have no room to do anything, PITA, the more room you have you just fill it

Extractor fan - I was thinking of getting the bigger one - glad I didn't now as this is plenty big enough. It shifts 5,100 cubic metres an hour so should empty the entire garage of air in just over a minute at full chat, so that should be enough Brick in photo for scale.
Also found this led portable lamp on the web - I looked for someone on another thread but thought it worth getting one for myself as well. It's super bright, I'll do a photo tonight to show it - charges via a std android phone cable and can also supply a charge to your phone as it has a power out socket as well.
