Some channels i like to watch:
Stanceworks: Mike Burroughs building a 308 Ferrari stanceworks style
KSR performance & fabrication: building racecars with an incredible eye for detail
Maximus ironthumper: building a zil truck, restoring a landrover and off grid living
Matt's offroad recovery: hauling cars out of the mountains and dunes with an old cherokee and an awesome corvair wagon (they did a built serie on this)
Fab rats: friend of matt, working on cool 4x4 projects, very inventive
Mike fpe: twin turbo fiesta and other old Fords
Driftworks: builds several very cool cars
Superfast Matt: tesla powered Jaguar and other cool projects
Junkbuilds: crazy hungarian guy, makes some cool stuff
Wesley Kagan: lot of technical info
Barrel bros quality wheels: lot of old japanese cars
Lucky's garage show: Lucky Costa (motortrend) his own projects
And two more for the bike people:

Allen Millyard: awesome bike/engine builder

I'd like to mirror most of the above.
The WelderUp channel is good, and free of the tv bullplop. Life of Lind, rebuilds motorhomes and busses so far, quite a new channel. Bit like Vice Grip Lite. Golden Rust or Bust only has a couple of videos, but they're promising. Dylan McCool has some good stuff, but he's a bit flat, Junkyard Mook is a bit too quirky on her own Bikes and Beards - Only a tiny bit god bothery and easy to overlook. Be Restored - Cool project cars, great production, ruined by incessent god bothering. Frank Stephensen - Car designer, talking about the design and language of cars, goes into critiquing viewers cars and cars in videogames also. Allen Millyard - Cool bike stuff.

Currently on my subscribe list are Vice Grip Garage, Aging Cars, CarThrottle and Rich Rebuilds. Ed China's just started a new online series (Ed China's Workshop Diaries). It's pace is somewhat more gentle than the old Wheeler Dealer days...

People were complaining that WD didn't show enough detail, I think Ed now shows too much. On that Alvis, showing him struggling and screwing all 4 wires was a bit unnecessary in my opinion. And the Ask Ed section is tedious. It's full of people who just want their name said on TV. Ooh, Ed, My tyre has gone flat and I can't work out how to fix it. Or, OOoohhh Ed, My windscreen washers don't squirt. They suddenly got weaker then stopped but it still makes a noise, what should I do. Although, the guy with the Disco who said it did funny things, and Ed was like yeah, and? They all do that.

Taking about 3 episodes to diagnose the (quite obviously) faulty fuel pump in the (parked for 15+ years) Land Rover was overkill - and since he's now taking donations from Patreon too much time is given over to questions. As background noise it's...fine.

With who he is, and already the amount of sponsers he has, I imagine companies are falling over each other to get involved. He's not a no-name youtuber so why does he need patreon?

The Edd China videos are up and down for me, I heard ep10 was tedious product placement and skipped it completely, I watched 11 with the rally Mini though. Ask Edd is useless, and the 'projects' do get left at odd places with a 'but that's for another time, bye'. It's all just a bit... odd.

Adding to my previous listTaylor Ray - this guy is really very good, builds 'normal' cars in his quite large garage admittedly, but does a lot of fabrication and shows the detail. Been watching him from when he was sharing a two car garage working on a turbo MX5 with a door as a work bench. The guy can drive as well..... P.

Grind Hard Plumbing Co - lots of crazy custom things like 100hp power wheels, rotary drift trikes, and 2JZ lawnmowers, all by some blokes in a shed out in the boonies. Did an overland trip in modified powerwheels. They say 'yoo' and 'full send' a lot which takes a bit of getting used to, but worth it for the sheer amount of ambitious DIY fabrication they do. Allen Millyard - Amazing eccentric chap who makes custom motorbikes. Things like cutting and shutting 2 4-cylinder engines to make an I6 (including crank casings, crankshafts, cams...the lot). Good explanation, and makes something like turning 2 I4s in to a straight 8 sound deceptively easy Fanatik Builds - very ambitious LS-swap GT6 project including completely new fabricated chassis, all pretty much with hand tools, and good explanation. Jethro Bronner - very soothing channel where a south african chap potters around restoring 60s Alfa Romeos. Also good explanation. All of the above have garage setups that are within the reaches of a moderately ambitious DIY setup (with Fanatik Builds doing theirs in a UK-sized single garage, and Allen Millyard doing his in a couple of garden sheds! Albeit with a milling machine...). I do rather like the ones that do ambitious things with achievable setups.

The amount of stuff they just know is hilarious as they walk round the junk yards calling off model years and the differences between a 73 and a 74 Pinto wagon... Plus they have a dog. P.

Oh, found a bunch of good stuff thanks to all the recommendations! Here's a few more: Geoffrey Croker restores a Land Rover and some tools/machines, great dry sense of humour. Soup Classic Motoring works on a Lotus Esprit now and did a Range Rover earlier, the stop-motion stuff is amazing! Good old Arthur Tussik for questionable but still amazing repairs. Baptiste Pitois is doing offroad stuff in old Peugeots and Citroens. It's in French and I have to use the auto generated subtitles that are a bit curse word but still great stuff! Foresty Forest is not really car focused, he does van life and hikes in Canada in a van he converted along the road. It's just relaxing to watch and he's a nice guy. Harry's garage is mostly expensive stuff but he's got several restorations running (he's not doing the work himself) and it's no-drama and informative! Restore It mostly BMW E30 car and parts overhaul. Condition: Cheap, a friend of mine who's still finding his flow but if you're interested in VW Eos roof repairs he's the guy

Outlaw garage - Porsche and VW porn

Late Brake, Harry's Garage, Vice Grip Garage, Binky, MCM, 4WD 24/7, I am horribly addicted to watching RWB videos as they are often really well produced but the stuff he churns out and the hatchet jobs he does make me cringe.

I’m going to go off on a tangent, as despite what I do I watch almost no YouTube car related content- I’ve tried and there’s just too many wonnabe-famous chancers talking utter plop about things they’re aren’t particularly skilled at themselves. Bad Chad is the physical embodiment of all of this. All swagger and bravado in a poor attempt to hide his lack of actual skill (or working eyesight in a lot of cases).
I largely watch history related stuff which isn’t really relevant, but I also watch some amateur engineering type things. I tend to favour people I might actually learn something from, in a ‘background knowledge that has practical applications’ type of way, so- BOLTR/AvE bigclivedotcom (also has an excellent sideline in carbonating drinks that should not be carbonated) Lockpickinglawyer And I can proably even shoehorn in Tom Scott.
You will learn more interesting, practical stuff off those few channels that the entirety of the ‘look at ME’ automotive channels. You might find it boring, maybe not, but generally speaking if you’re watching on YouTube you’re going to have a longer attention span that the mainstream media credits the average watcher with, and will be capable of engaging with someone who doesn’t find it necessary to shout at the cameraman in a superfluous manner.

The above are the regulars. Plenty of other occasional visits. Though recently YouTube has upped the ad count on som channels to near unwatchable levels…

My vote goes to Vice Grip Garage, its got the shine on it.
Most car related channels are either vacuous guff, or ruined by the numpty 'presenting' it. Some of the worst offenders have already been mentioned, however I concede its subjective. I also notice that a lot of 'retro' channels start out ok and then quickly descend into 'Look, I bought the UKs cheapest Lambo bro' territory.
I quite like watching the 70s/80s car stuff on the Thames TV channel and William Woollard era Top Gear for the nostalgia. The rest of the stuff I watch is either history or retro computer related rather than cars because, as above, too many of the blokes who front those channels are narcissistic wannabes or 'geezers' and I can't be doing with blokes like that.
