ColdWarMotors, which is one guy out in Alberta, with his buddies, just working on cars. It's kind of like watching Fargo, but with old cars and you may initially be forgiven for thinking they're a bunch of idiots, but the main guy is actually a very skilled body and paint man.
Grind Hard Plumbing can be good fun, though it has more of an offroad slant.
Retropowercars you probably know about already. Very high end restomod stuff form the UK.
SuperfastMatt is great and in a similar vein, try Wesley Kagan, who is scarily good at engineering. He made a freevalve system in his garage.

big fan of diesel creek - his happiness cannot be contained when he gets something up and running - and the people who laid the floor in his new shed were absolute perfectionists and a joy to watch.
vice grip garage - one of the most underrated mechanics on youtube. not interested in his hot rods as much as his adventures getting cars dumped in the middle of nowhere and driving them home.
late brake show - always really good. the last one on the crazy coachbuilt bmw 2500 estate was really special.
my current absolute favorite is tasty classics - a big, charismatic ginger haired bloke does two hour beauties on rescuing abandoned classics. The series on the panhard was absolutely epic - I patreoned him and I always said I wouldn't do that.

A few from my list I don't see recommended much... I prefer his earlier builds, but B is for Build is still a guy figuring it out as he goes. He started with things like swapping a 2JZ into a BRZ, and got into rebuilding/modifying exotics - he's built a couple LS powered Lamborghinis. Mustie1 is great for oddball small engine stuff, just tinkering in the shop. Everything from scratch-built motorized bicycles to repair/refurbishment of worn out backhoe, and just about anything with a motor in between. Vehcor is modern wreck rebuilds, but it's very straightforward, no fluff. Interesting to see how moderns are put together, and not much tolerance for the "haters." Watch Wes Work is another guy in the midwest US putting all sorts of new and old stuff back together. Aging Wheels is entertaining, doing some interesting stuff with electric drivetrains of all shapes and sizes while playing with a Reliant Robin and a Trabant, which here in the states are real oddballs. Others you probably already know about: Halfass Kustoms, IronTrap Garage, Mortske Repair, Urchfab, Make it Kustom, and Fitzee's Fabrications

Hubnut, Lloyd Vehicle Consulting, Pollitt’s Projects are some I enjoy. And Retro Rides YT channel of course.
When it comes to car YTers, I prefer people who know what they’re talking about so to speak, over people who can be entertaining but don’t have the knowledge and/or personal experience of the cars they’re talking to you about.

I can't believe I forgot to mention him, as this is one of my favourite things to watch anywhere, but - if you aren't put off by subtitles - do check out Davide Cironi. I think this may be an Italian TV show, as the production value is super high. Anyway, he does a lot of stuff, test drives and interviews, but my favourites are "Dal Pollaio alla Pista" (from the chicken coup to the track) where he salvages junky cars and tunes them up. Sometimes one episode, sometimes two, but I always end up wanting whatever he's worked on.
