Well i've taken the plunge, got a demi of WOW on the go, 20 mins later and its bubbling away merrily. Also had a tester using same recipe but with apple and elderflower instead of the orange, only time will tell on that one. If these go alright theres an order in for some ginger beer so "ben711200"'s recipe will get tried out next. If you do, use more ginger than I said, brown sugar is nicer than white and give it time to properly carbonate in the bottles as it gives the illusion of more fire!

I went blackberry picking last night. Came home with a hoard of about 2.5 kg of fruit for winemaking. 2 kg went into a bucket last night with some boiling water and a campden tablet. Will seive it into a demijohn and add yeast and sugar probably tomorrow night. In the meantime; BLACKBERRIES!!! Edit: Blackberry wine Method so far: 01/07/11 2 kg blackberries into a bucket Pour over 1.7l boiling water and a mug of stewed black tea made with 2 teabags Mash up to a pulp Add 1 campden tablet, 1 teaspoon of pectolase, 1 teaspoon of yeast nutrient Cover and wait 24 hours 02/07/11 Strain through a seive Strain through a muslin into demijohn 03/07/11 Add 1kg white sugar and 1 teaspoon of Young's wine yeast to demijohn. Fit airlock. After 12 hours it's frothing up and brewing: Next step: waiting

Both DJ's still bubbling away every 3 seconds or so, smells great though!! off to shop later to get the bits n bobs ready for racking.
i'll have a fiddle about with the ginger beer, see what concoction i can come up with.

Did you add finings or are you going to give it a go clearing by itself? I added 250ml of juiced apples from work to my BB wine this afternoon. This is very significant because it includes the one and only apple I could find on Isaac Newton's apple tree. Damn groundsmen must have pruned all the apples off at some point because all the trees were bare Will be topping it up to the top with shop apple juice when it has calmed down in a day or two. Also put on a second blackberry wine. Ingredients for this one are as follows: 1.7kg blackberries treated as per before 1.7l boiled water Mug of stewed tea made with 2 teabags 1kg sugar 1 teaspoon each of pectolase and yeast nutrient 1 teaspoon of Young's wine yeast Will be topping this one up with red grape juice instead of apple.

Did you add finings or are you going to give it a go clearing by itself? No finings and left it to clear, got no better after day 4 so bottled today, after having to move dj and letting it re settle. 11 bottles sat on the side now. ;D

Thought I'd restore some balance to this thread with beer.... My latest brew, apparently it will be a Hoegaarden-style beer (according to the recipe). Ingredients: Note: The most essential ingredient to making beer, which is some beer to drink, is not shown..... Boiling: This recipe uses crushed coriander seeds and citrus peel. Should be yummy! I then put it into a plastic bucket for a few days, before transferring to a glass fermenter. Fast forward a few days: Had a little taste, and it's promising! And how it is now: ps. this thread has got me interested in cider, my new neighbour has a very large apple tree and said we can help ourselves. I think I'll be having a go at some different ciders.

Well had a taste of the WOW last night and its mellowed out a lot since bottling, another week and it should be better than a cheap shop bought wine in the mrs opinion. I also noticed its distinctly clearer after being sat under the stairs so perhaps i should leave it longer next time, now i know how clear is should be On the back of the tasting yesterday i've been shopping got more juice and more sugar to do the same again. Also got a good helping of ginger, couple of lemons a bag of muscavado and demerera (SP?) sugar

Second batch of wow and apple and elderflower is on the go, ginger beer is sat on the hob keeping warm for an hour or 2. I've changed the recipe for the ginger beer a bit going by what i've been told.
Ingredients
2 fist size bits of ginger (about 10oz going by asda receipt) 1 1/2 lemons 1lb demerara sugar 1.75l water (all that would fit in my pan)
Then followed the instructions on other recipe.

I don't like my WOW much. It's got a slightly strange taste that I don't get on with, that I think has come from the orange juice. I've been watering it down with red grape juice which makes a kind of rosé, and is palatable

I back sweetened mine to 1.020, the elderflower one had a dash of elderflower juice after i racked it and is the preferred brew but both are quite drinkable. Mrs said it was like firewater as i was bottling it but its mellowed out a lot.

It's not home brew.. but after tasting lemon gin at the Gathering, I had to make some! I was told, whilst I was drunk, by another drunk person, that it was 3 lemons juiced, an equal quantity of sugar, and all the bits of lemon rammed in the bottle. I'll leave it as long as I can manage... Also having a bit of an experiment with an idea that someone else (Chairchild) mentioned on this thread. Making sugar wine and then back flavouring.. In this case, it'll be a sugar wine, yeasties killed off and then flavoured with blackberries, left for a month or so. My approximate theory is that it will keep it tasting much 'fruitier' rather than like a wine and will not need aging in the way a wine would. That said, I'll be having a bash at J69's blackberry wine also

Okay guys, you've piqued my interest. Going to pick up a couple of DJs and some equipment tonight, any tips for a first brew? My local shop has wine kits but I was thinking of starting with turbo cider or WOW. Thoughts? Tips for beginners?

As a total beginner myself, my first brew was a turbo cider and was quite frankly as easy as pie. Think I did Apple Juice, sugar (youll find a recipe detailing quantities online), mug of very strong tea and some yeast and then left it til it stopped making gas. Then added more apple juice (I find that doing the sums so you have 5g of sugar per 500ml bottle carbonates it just perfectly, most juices have the grams per ml on the side) Have fun! My main mistake was getting brave and doing a monster volume brew on an untested recipe..... it turned out ok (just!) but only scale up when youre happy

First one i did was a wurzels orange wine thought i had messed it up when i tasted it at bottling, now nearly 3 weeks on its the familys favourite drink

I think I made a discovery last night. I've been watering down the WoW with red grape juice to make it into a rosé, which makes it a lot more drinkable. Last night a lightbulb lit above my bottle of strawberry Ribena. I think we have a way of sweetening and flavouring without killing the alcohol.
I'm trying to stay dry during the week, so I'll let you know at the weekend ;D

That said, I'll be having a bash at J69's blackberry wine also Sugar wine just does not like to brew by itself. The lack of nutrient means it's really hard work to get it going. I've remedied this by putting in a 200g or so of liquidised blackberries passed through a fine-ish seive to act as a nutrient. They were previously frozen so figured I'd be safe not to campden and stuff first. It's worked a treat and gone mental now. Once it's died down, it'll be racked, topped up with blackberry juice (messy process) and stabilised. It's had about a kilo of sugar so if it all converts to alcohol, it should end up at 12-13ish% My more conventional BB wine is looking like J69's in the above photo. Probably because I followed his recipe Must research research WOW. Everyone seems to get fairly good results from it.
