Without even having to think about it, the W124 is where I'd be putting my money. £6k would just about get you a decent one, maybe even an E320/320E. Cracking drive, and going up in value so would be a genuine investment if well cared for. All gave a good spec too. Don't worry too much about the rust; mist will have slightly scabby wings, nothing a couple of hundred £ wouldn't sort. Check the hacking points and rear sills though.
Second choice for ne would be a c900 T16s. Again, going up in value, but more care needs to be taken when buying.
The Wrangler is a great shout too. Lots of fun, and good in the winter too, especially with a hardtop.

Still waiting in contract for new job (dragging on and I'm desperate to resign!) so no spending yet but eBay fiddling seems to have narrowed me down to -
W124 Merc for the high roller money, or Mk4 Escort which I never would have considered before, Mk1 Golf and for the left field choice I miss my old ST162 so the Celica is a potential.

Can't believe no one has mentioned Cavalier Cabriolet. Not as roomy as a hatch but can comfortably fit 4 adults and luggage. Bullet proof rapid engine, easily found parts and for some reason they are STILL cheap as chips. Here's mine I sold about 8 years ago which I regret

I know Mustangs have been mentioned, and i think there's a lot to be sai for a Fox convertible. Here's mine: Cheap parts, cheap to buy (this was well under 3k), fits in a standard garage, not bad mpg for a V8 auto, full four seater. Insurance is reasonable too.
