As a minor update I've been doing research and have a couple of upgraded extruder gears on order. One for about ££30 and one for £14. In contrast to the upgrade I already have these both grip the filament from both sides. The more expensive one has a 3:1 reduction gear to increase torque. I'll update as and when I get something fitted and working (or not).
This just highlights the nature of these hobby printers. You're always fiddling and upgrading but the real cost is in time not money.

FWIW The £30 one has worked very well. There are various manufacturers of essentially this same thing. You can google Bondtech or BSG and find plenty.
It attaches the existing stepper motor but instead of a direct 1:1 drive, it has 3:1 reduction gears. Ie the motor has to turn 3 times as fast for the same amount of filament extrusion. This and the fact that the device bites and pushes the filament from both sides has eliminated my under-extrusion problem.
It's not a straightforward plug and play. Well physically it is but you need to reverse the stepper motor power connector and change the extrusion steps but that's not hard. I can stick up youtube howtos going into more detail if anyone wants.
