I hate to say it (cos i love this build) but i think you're going to have to decide whats the most important to you, the fuel economy,or the performance.
I'm still of the opinion that trucks need truck derived engines.

I'm not that clued up on truck engines, but wouldn't something out of a Ford Cargo or similar fit the bill?

that's what I was thinking of earlier, I've worked on early Iveco Eurocargo's and some had a Fiat Straight six, later ones have the Tector 4 cylinder.

330cu straight six diesel from the successor bedford TK ?
contemporary (ish), has about the same output as your petrol (107bhp 2800rpm, 238lbs-ft 1800rpm) came with 5 speed. 16-20mpg

Even the classic lorry boys consider it a Sluggy McSlugsta but we'll put it down as the classic option.

what about the 2.3 out of the newer iveco dailys, my xlwb hi top daily returns over 30 mpg when loaded to 3.5 t and will still pull to 80 no probs when dully loaded and they also come in the 6.5 t dailys so should cope. on the plus side i also have a spare engine sitting in my garage you could borrow for fabrication if you need one.

Could you measure the width of the engine across the top please? would it go between the 30 inch gap of the chassis members?

I second the suggestion of a Cummins Diesel, if you can find one over here or are willing to have one shipped over from North America. A first generation 12 valve versions would be the simplest to swap in (mechanical injection).
It's the same layout (straight six) as the original engine so it should fit, gets excellent fuel economy for its size, has more than adequate power (160 hp 400 lb-ft torque) and will rack up high mileages without complaining.

Cummins found in Daewoo branded trucks too, can;t remember if it was a big 4 or a 6, was only a small flatbed.

As i said before, as found in Daf 45/55 trucks - they go on ebay for literally £300 upwards thats less than a 200tdi lump Cracking engine

Cummins 6BT is looking good! It certainly seems to fit the hole and there's one on Evilbay now with a ZF 5-speed box for £840. The transfer box is separate on the Goddess so I won't lose 4WD and low range. Weight's a bit high but the Beddie 300 can't be much short of it. Only problem I can see is the governed speed of 2,700rpm which is a bit low for my required top speed of 55-60mph so that artics are not constantly overtaking me on motorways. very easily with it being on a mechanical bosch pump, however running it at 56 mph at those RPM's wont be very efficient!
mind you, many artics these days are governed to 50 anyway.

Sadly not enough of them. When towing the Great White Whale (my Shuttle trailer) I have to keep at 60 in my daily or I have a procession of 40 tonners inching past me. Towing behind the Landie at 55mph is decidedly dangerous

Good point Einar,
On checking the ZF top ratio is 0.76 and the alternative Getrag is 0.77. That would give me 3550rpm approximately which I'll work out to real speed with the tyres I'm going to use later today but a guess would be around 60mph.

what ratio is the transfer box in high ? iirc youve already made a tyre purchase, but thats an easy way to increase final drive too
