I am getting the loom sorted and fitted and tweaked but I know it'll be a while till the cortina will be on the road
My question is do I buy a new battery even though it will be at least a year to 18 months till she is on the road or do I get a used battery to do the jobs I need to do?

If it's not on the road I'd say use any slave battery for the moment. I bought a new battery for my Sprite and despite keeping charge topped up ever so often a load test shows it's starting to fail after less than 2 years. Sods law says I can't find the receipt to check if still under guarantee

The only way to keep a battery in good nick if the motor aint running is with an optimate or similar but you will need a power supply.
