Hi I'm thinking of putting pvc (probably not the correct material, but it is fuel safe) fuel lines on my project and i have to use some 1/2" to 16mm threaded converters. What type of thread sealer can be used with Ethanol?

Loktite do a liquid thread sealer made for fuel taps and such. Expensive but good.

I'd go with the Loctite solution. Similar to threadlock and does a similar job but I found that to be the best solution when I did my DIY nitrous conversion. That held gas at high pressure! (like 1000psi) Will eaisly handle liquid at fuel system pressure.
