I've just picked up a 1999 Volkswagen Polo Estate to use as a daily work hack. Seems a decent little car but the seats don't seem to have any support. I've not owned any thing VAG before, I know this little wagon is based on the Seat Cordoba. I was wondering what seats from the VAG family could I use that would bolt in and be more supportive? Passat? any recommendations welcome!

If it uses the '3 runner' (2 rear, 1 front-centre) setup, anything from the older end of the VWAG group will fit inc. Mk2/3 Golf, Cordoba, ect.

Golf 3 gti front seats will fit. I had them in my old mk2 Caddy van, which is essentially the same from the front to the B pillars.
slide the current seat back, remove the small bolt that runs horizontally through the runner at the front, slide the seat all the way back until it falls out of the runners, fitting new seats is the reverse of removal.

If golf 3 seats fit, then Passat b3/b4 seats will also fit, although I thought mk2 golf runners were slightly narrower than golf 3?
IME the Recaro seats out of mk3 golfs were the best of that era, found in highline and colour concept spec cars, downside is they all suffer from bolster wear.
