Fitting a mildly uprated new camshaft to a Rover V8, the cam will be fitted at least a week (could be 2) before the engine is run for the first time with the new cam.
Will the cam break in lube last for this length of time that the engine is sitting or should I use something like Graphogen Assembly Compound? And if it's use Graphogen, is there a less costly version?

if you don't start it, there is no load on it, that cam lube will work for a good while of cranking while finding problems.
it will stick for ages

On a Rover V8 don't foret to pack the oil pump with Vaseline and prime it with an electric drill on the pump shaft before cranking the engine.

Be sure to follow the cam manufacturers break in instuctions. I'd also use an engine oil with a high ZDDP content.

ZDDP helps protect the camshaft during break in and is used in oils recommended for older engines with flat tappet type lifters and don't need any additional ZDDP.

You just want cheap as chips oil for cam break in. No fancy high ZDDP stuff. That goes in after the initial run in period.

Ive had a few RV8s, and wiped a couple of cams out, My preference would be a good quality cam running in lube, theres plenty about, and ZDDP is always a good idea, not a lover of synthetic lubes on older style engines either, Syn has a better lubrication ability but I more suitable to modern coated bores, oh, and keep to 20/50, the oil pumps are volume rather than pressure, and RV8 gear pumps don't really like thinner oil either.

Got to agree with v8ian.
I wiped out a cam in a 460cu.in Ford and it wasn't a cheap rebuild. I had used the thin as p1ss red cam lube supplied by Comp Cams. It's useless (not just my opinion). I use Joe Gibbs break in oil and a bottle of additive now. Cam is coated with Graphogene which will not run off before it's started.
